Thought I would share this recipe I created with the help of Laurel tonight. It was delicious!
1c cooked lentils (we used a red and green mix)
1c peas (we used frozen)
1c green beans (we used fresh Ontario ones)
1c diced tomatoes with their juice
1/2c raisins
1/4c sunflower seeds
1/4c dried coconut
1tsp curry paste
No measurements of the following...used to make it tasty!
garam masala
turmeric
cumin
ginger
salt
pepper
sucanat
vinegar
lemon juice
oil or ghee (we used oil)
Stir fry the veggies and raisins and sunflower seeds in oil of choice (sesame is nice). Add all spices and liquids. Once tender, add lentils, coconut, and curry paste. Add additional spices as required. Heat over low until desired consistency is reached.
Serve over brown rice
Top with chopped almonds and plain yogurt (the wee one wanted to try raspberry...I convinced her otherwise!!!) :)
This was really nice for those times that you are just about out of everything...we keep a nice supply of bulk goods though. It served two hungry adults and one kid who digs Indian foods.
I think it would also be nice with other veggies and perhaps potatoes and garbanzo beans.
